PB & J Sandwich Cookies

- 1c. all purpose flour
- 1/2c. unsalted butter, softened
- 1/2 tap baking soda
- 1 egg
- 1/2 tsp salt
- 1 tsp vanilla
- 1/4 tsp baking powder
- 1/2c. chunky peanut butter
- 1/2c. light brown sugar
- 1/2c. sugar
- 3/4c. quick cut oats
Whisk flour, baking soda, salt, baking powder in small bowl. Using electric mixer on medium speed. Beat butter and chunky peanut butter until smooth. Add sugar until well blended. Beat in egg and vanilla on low speed. Beat in flour mixture until just blended, then stir in oats. Use a level table spoon to scoop dough into balls. Use a fork to crisscross dough balls. Bake at 350 degrees, for 10-12 min.
Filling
- 1/2c. powdered sugar
- 1/4c. smooth peanut butter
- 2Tbs unsalted butter, softened
- 1 Tbs milk
- 1/3c. jam
On medium speed beat sugar, PB, butter, milk until smooth and fluffy. Spread on cookies ( Peanut Butter mixture on one side, Jam on the other) with jam to make a "sandwich". And a glass of milk to go with them!!! **Enjoy**

National peanut butter day indeed! I just had a peanut butter and jelly sandwitch today! Your cookies look pretty good...like something your Mom would REALLY like! :)
Your pictures are too good! ..and don't you be saying otherwise. My first thought when I saw the photos was "did she really take those?" Your camera must have been hammered again. :)
